Banana Bread Slice

Serves 12 bars or pieces of slice

 

Ingredients

• 2 cups rolled oats

• 2 tsp baking powder

• 1 cup pepitas

• 3 ripe bananas

• 4 tbsp chia seeds

• ¼ cup milk

• 1 egg

• 1 tsp vanilla extract

• 1 tsp cinnamon

• 4-5 tbsp maple syrup

• 2 tbsp olive oil

• ¼ – ½ cup dried cranberries, for sprinkling

Method

• Heat oven to 180C and line a slice tray with baking paper.

• Place rolled oats and pepitas in high speed food processor, blend until flour-like consistency.

• Place in large mixing bowl and set aside.

• Place all other ingredients, except cranberries, in food processor and blend until creamy.

• Mix wet and dry ingredients together.

• Press into a lined sliced tray.

• Sprinkle with ¼ – ½ cup of dried cranberries.

• Bake for 20 minutes.
