Serves 12 balls
Ingredients:
• 2 cups raw cashew nuts, finely blended (like flour)
• 2 cups desiccated coconut + extra for coating
• 2 large lemon, zested
• Juice of 1 lemon
• 1 tsp vanilla extract
• 4 tbsp. maple syrup
• Pinch of salt
Method:
• Place baking paper on a medium sized baking tray.
• Combine all ingredients in a food processor (or Thermomix) and process for 1 minute until mixture has dough-like consistency.
• Measure 1 tbsp. amounts of mixture and roll into individual balls.
• Roll each ball in desiccated coconut to coat.
• Place balls on baking paper.
• Refrigerate for 1 hour to set.
• Keep in refrigerator until ready to consume.
