Serves 14 – 16 cookies
Ingredients
• 1 cup wholemeal spelt flour
• 1 cup rolled oats
• 1 cup coconut
• ¼ cup chia seeds
• ½ cup pepita seeds
• 1 tsp cinnamon
• ½ tsp ginger
• ¼ tsp cloves
• 2 tsp vanilla
• 1/3 cup honey (or golden syrup)
• 100g butter, melted
• 1 egg
• 2 teaspoon baking powder
• 2 tbsp. hot water
Method
• Heat oven to 180C
• Combine wet ingredients
• Combine dry ingredients
• Mix all together till just combined
• Measure 1 tbsp amounts of cookie mixture and place on baking paper lined tray
• Shape to create circular cookie
• Place tray in oven for 10-12 minutes, till lightly browned.
Make It More Of A Treat
• Drizzle or dip top in melted dark chocolate
