Banana & Blueberry Bread

Need a bit of Sunday baking meal-prepping inspiration, why not make a healthier version of banana bread for snacking on during the week or eating for breakfast with some good quality greek yoghurt.⁠

 
We love this recipe because its high in fibre and so much research is linking the consumption of a high fibre dietary pattern to having a healthier body and reduction in various chronic disease states.⁠⠀

INGREDIENTS⁠:
1.5 cups buckwheat flour⁠⠀
0.5 cups brown sugar⁠⠀
– 1.5 tsp baking powder⁠⠀
– 2 tsp cinnamon, ground⁠⠀
– bananas (extra one if you want to bake one into the top)⁠⠀
– 1/2 cup of greek yoghurt or plain kefir⁠⠀
– 1/4 cup extra-virgin olive oil⁠⠀
– 1/3 cup maple syrup
– 2 tsp vanilla extract⁠⠀
– 1 cup blueberries (frozen or fresh)⁠⠀
– 1/4 cup chia seeds⁠⠀

METHOD⁠:
– Preheat oven to 170C⁠⠀
– Combine dry ingredients, excluding chia seeds, in a bowl and set aside⁠⠀
– Combine all other ingredients, excluding blueberries, in a food processor and blend until smooth⁠⠀
– Add wet ingredients to dry ingredients and combine lightly. ⁠⠀
– Fold through blueberries.⁠⠀
– Pour batter into a prepared loaf tin, top with remaining banana and a sprinkle of cinnamon and brown sugar⁠⠀
– Bake for 1hr – 1hr 15min — it’s cooked when skewer inserts and removes cleanly⁠⠀
