Banana Oat Pancakes

A pancake can easily be part of a healthy dietary pattern providing you develop the habit of:

– Swapping white flour for wholemeal flour⠀
– Adding a spoonful of chia seeds or flax seeds to bring omega 3s and extra fibre into the meal⠀
– Removing sugar from the pancake recipe in favour of a banana (or grated apple) for sweetness⠀
– Top with Fresh fruit or berry compotes rather than only maple syrup ⠀
– Top with yoghurt for a serve of probiotics and protein⠀
– Top with chopped nuts to add protein, healthy fats and fibre to the meal⠀
 
Ingredients:
– 2/3 cup wholemeal self raising flour⠀
– 2 bananas⠀
– 1 cup of ground oats⠀
– 1/3 cup almond meal⠀
– 1/3 cup desiccated coconut ⠀
– 2 eggs⠀
– 1 tsp baking soda⠀
– 1 tsp vanilla extract⠀
– 1 tsp cinnamon⠀
– 1 cup milk⠀
All whizzed together in Thermomix or food processor.
