INGREDIENTS:
Stewed Fruit
1 kg apples, cut into small chunks (I love to use pink lady or golden delicious)
Generous splash of water
1 tsp. vanilla extract
2 tsp. – 1 tbsp. ground cinnamon
Crumble
1 cup rolled oats
½ cup desiccated or shredded coconut
½ cup almond meal
½ cup walnuts, roughly chopped
½ cup almonds, flaked almonds
1 tsp. ground cinnamon
1 tsp. vanilla extract
2 tablespoons organic maple syrup
3 – 4 tablespoons coconut oil or butter, melted
Serves 8-10 portions
METHOD:
Stewed Fruit
- Wash the apples and cut into wedges or small chunks, leaving the skin on and removing the core.
- Place the apples in a saucepan and combine with water, vanilla and cinnamon.
- Cook over a medium heat for about 10 – 15 minutes, stirring occasionally until the apples have completely softened. Taste and adjust seasoning to your liking if necessary.
- Serve warm or allow to cool to room temperature then store in airtight container in fridge for 4-5 days.
Crumble
- Heat oven to 180C.
- Combine all the dry ingredients in a large bowl.
- Combine the wet ingredients in a medium bowl.
- Add the wet ingredients to the dry ingredients and combine to coarse crumble forms.
- Scatter the mixture over a lined baking sheet and bake for 10-15 minutes until the crumble is golden brown.
- Allow to cool to room temperature then store in an airtight container until ready to serve.
To Serve:
2-3 tbsp. stewed apple (cool or heated), topped with 2-3 tbsp. crumble and a dollop of natural yoghurt
