Choc-Orange Protein Balls

Serves 12 balls



• 2 cups raw cashew nuts, finely blended (like flour)

• 8 dried dates, pitted

• 2/3 cup desiccated coconut

• 1/3 cup cacao powder

• ¼ cup maple syrup

• 1 tsp vanilla

• Zest of 1 orange



• Place baking paper on a medium sized baking tray.

• Combine all ingredients in a food processor (or Thermomix) and process for 1 minute until mixture has dough-like consistency.

• Measure 1 tbsp amounts of mixture and roll into individual balls.

• Place balls on baking paper.

• Refrigerate for 1 hour to set.

• Keep in refrigerator until ready to consume.



• Cashews can be swapped out for raw pepitas or sunflower seeds if you have a nut allergy or want to use it as a school lunchbox snack.
